Making Whoopie...

...Pies.  Geesh!  A couple of weeks ago, the girls and I visited a delicious local bakery while we were out and about and each of us picked out a treat to take home. While the girls selected cupcakes, I chose whoopie pies for Lee and I.  The whoopie pies were enormous, so Lee and I split one and then the girls ate the other one for dessert over the next few days.  One bite and they were hooked.  My mother, who is an excellent baker, was reknowned for her whoopie pies when I was growing up.  When we had bake sales in high school, she always made them and they usually sold (and sold out) for $2 each, which is pretty impressive considering everything else sold for about 25 cents.  So I pulled out her recipe on Sunday morning and the girls and I made our first batch of whoopie pies together.  They loved the process because we had to use the mixer (their favorite part of baking) twice.  The result was delicious, although I was not 100% satisfied with the filling and may have to tweak that part of the recipe in the future.

Just reading this post has my mouth watering for one on mom's whoppie pies...I should probably get a hold of that recipe.
